The Castillo variety was developed by the National Federation of Coffee Growers of
Colombia to offer increased disease resistance while preserving remarkable flavor qualities. Developed as a more robust alternative to Caturra, Castillo stands out for its ability to adapt to different altitudes and microclimates while maintaining a beautiful aromatic richness.

Grown in the Huila region, renowned for its coffees with aromatic profiles
balanced, the Castillo presents distinct notes of caramel, citrus and chocolate
black. Its medium acidity and prolonged natural astringency give it a
dynamic and complex mouthfeel.

What sets Castillo apart is its ability to offer balanced acidity and a
aromatic complexity while maintaining a beautiful structure in the cup. Its notes
characteristics of dark chocolate, hazelnut and caramel are enhanced by touches
of lemony and orange citrus fruits, giving it a dynamic freshness and a
prolonged natural astringency that enriches the mouth experience.

Harvested at an altitude of 1400m, Castillo de Huila benefits from an ideal climate which
imparts a natural sweetness and full body. Its fermentation process and its
controlled roasting reveals subtle floral notes, a light herbaceous touch
and a lingering finish.
